Thai-Lime-Thyme!   This was a bit more "occidentally" flavored, tastes wonderful on it's own and made a great marinade   Recipe:  3/4 c grated horseradish  1 med chopped onion  10 cloves chopped garlic  1 thinly sliced lemon  6 sprigs fresh thyme  Zest of 2 limes  3 dried Thai peppers  Fill remainder of jar with raw AC vinegar and let 'er sit ( I usually start Fire Cider on the new moon and let it go till the next)  Enjoy!
