Love chia seed and this is all the more reason to eat it...Meet Mr. Chia  Ive just learned about this seed. Besides health benefits (said to be beneficial in reducing inflammation, weight loss, thyroid conditions, hypoglycemia, diabetes, IBS, celiac disease and even acid reflux), it functions as a thickener (replace gums!) in LC cooking.
