生煎包(每個35克約7個)  餡料: 1. 高麗菜丁180克加入1/2-1小匙美味鹽拌醃至出水..擠乾水分... 2. 絞肉90克.薑末1/2-1小匙..蔥末4-5大匙..美味鹽1/4小匙..糖1/2小匙..胡椒..香油各少許拌勻.. 3. 將高麗菜.絞肉混合拌勻即為餡料..  外皮材料: 中筋麵粉150克..速發酵母1小匙(夏天用1/2小匙即可)..細砂糖1大匙..美味鹽1/4小匙..油4.5克..水85-90克..  麵粉水: 水200克..麵粉1大匙..  做法: 1. 粉類過篩..將全部材料放入攪拌盆中攪拌至光滑..基本發酵至兩倍大...(室溫28度約45-60分).. 2. 發酵完成後分割每個35克..桿成邊薄中厚..包入適量的內餡..收合..蓋上保鮮膜後鬆弛15-20分.. 3. 平底鍋倒入適量的油..排入包子..表面灑上白芝麻..淋上麵粉水..蓋上鍋蓋..小火煎至湯汁收乾即可..
