This is a lovely lemon sole recipe by Martin Wishart. Lemon sole is paired with mussels and splashed with cider, resulting in a lovely sole dish

  • 600 g Mussels, cleaned and in the shells

  • 1 White pepper, freshly ground

  • 175 ml Cider, dry

  • 20 g Butter, unsalted
  • 250 g Creme fraiche

  • 3 tbsp Water
