Latkes 4 lg potatoes 1 onion 1 egg, beaten 2 tbl Flour, Matzo or corn meal salt 2 tbl oil or enough to fill the pan to about 1/4 inch applesauce and/or sour cream Peel & grate potatoes & onion. Soak the mixture in water, or squeeze it in a dishtowel to remove excess starch. Mix potato & onion with egg, meal, and salt. Heat oil in a 10" pan over medium heat until it is quite hot. Drop 1-2 tablespoons of the potato mixture onto the pan per pancake. Turn once.
I MADE THESE! I can attest to their deliciousness. I ate the entire batch, but I don't feel like I ate too much. They're filling and as someone who can PLOW through entire bags of snacks, this actually took a while to eat because of the chickpeas' texture. AMAZING
