Chicken Mozzarella Pasta with Sun-Dried Tomatoes Note---instead of sundried used fire roasted tomatoes, added a tsp of better broth, and deglazed pan with pasta water before working with sauce..need to add a little extra "zip" next time ..but a keeper.

I made this earlier today, it has a minestrone-type vibe, but with lentils instead of beans. It's a great way to get some anti-inflammatory ingredients in a vegan, gluten-free hearty soup. I'd use less tomato next time, and possibly stir in some pasta.
