Crustless Mini Quiches  Makes 9   6 eggs 1/2 c milk Seasoning Mix-ins Options to try are spinach, scallions, peppers, cheddar cheese, onions, swiss, mushrooms, tomatoes, feta Preheat oven to 350°F Spray muffin pan w cooking spray.  Whisk together eggs, milk&desired seasonings.  Pour into muffin cups to 3/4 full  Add desired mix-ins  Stir each w spoon to incorporate.  Bake for 20 min, rotate at 10 min.  Quiches will be puffed up but will sink as cooled   remove&cool.  can  be stored
