Mexican Rice

This is an excellent authentic Mexican rice recipe (not to be confused with Spanish rice) that I make as a side dish with all of my Mexican dishes. The key is cooking the rice properly and using good quality chicken broth or stock.

Carne Asada Tacos Allrecipes.com  Review salsa verde: 6 tomatillos, husked, rinsed, half of a white onion, cut up, one jalapeno, seeded, stemed, 3 fresh garlic cloves placed on a baking sheet. I roasted these in the oven at 400 degrees for 30 minutes or until I noticed they got soft. I added them all to a blender along with a bunch of fresh cilantro. Added salt, black pepper and the juice of a lime.

Mojo Tested & Approved. TAQUERIA STYLE TACOS. I used sirloin instead of flank steak. Per the butcher, you should use this cut for fajitas. I didn't try the relish for the tacos. Just the meat & cheese w/tomatoes was delicious. Tip: serve meat straight out of skillet. It doesn't keep it's juiciness if you put in oven/warming drawer. I used ''Mexican style shredded melting cheese'' if you don't have it, this is a good soy sauce substitute…
