Thai Green Chicken Curry...had eggplant, green beans, and zucchini. Added a dash of red pepper flakes. Used two cans of coconut milk. Used Ghee instead of oil. Omitted the potatoes and sugar. Very happy with my first green curry attempt!!!
This is a fantastic dish - really easy - really tasty - really filling. Great one pot dish that isn't a stew. I decrease the potatoes and add other veg. To make it Gluten free, just use GF breadcrumbs. To make even more filling for teenage stomachs - serve with Polenta or Brown rice.
