MINI PUMPKIN CHEESECAKES 12 oz cream cheese 3/4 cup pure pumpkin (no added ingredients) 1 cup Splenda or Stevia 3 eggs 1 tbs sugar free vanilla flavoring 1 1/2 tsp pumpkin pie spice  Combine all ingredients and bake at 350 degrees for approximately 20-25 minutes.  Let cool for 1-2 hours in the refrigerator.  This made 18 muffin size mini cheesecakes.  Total Fat 6.9g Cholesterol 55.2mg Sodium 79.4 mg Net Carbs 2.7g Sugars 1.7g Protein 2.5g
