Fermentation # 8: VINEGAR. Apple cider vinegar. When I opened the jar as the juice was being converted to cider, I noticed this white growth on surface. Assume Kahm yeast (white stuff). Brown flecks are apple bits. Scraped it off the surface and tasted the cider - some alcohol starting, but still very sweet. Decided to filter and put back into "anaerobic" fermentation for more conversion of sugars to alcohol.
