Rum french toast~1/2- 3/4 C half & half ~3large eggs~ 2 T sugar ~ 1 t vanilla ~ 1 t cinnamon ~ 1/8 t nutmeg ~ 2 T rum ~ pinch of salt ~ 6-8 slices french bread, slightly stale cut thick~ In small bowl, whisk together half & half, eggs, sugar, vanilla, cinnamon, nutmeg, rum, and salt. Soak bread slices in egg mixture for at least 4 - 5 minutes..do not soak more bread than space for.. cook until light golden brown.
cinnamon-anise poached pears: peel, halve and core 2 pears..put in a shallow dish with 1 cup water, 1/3 cup sugar, 1 cinnamon stick and 1 star anise pod..cover with plastic wrap and microwave until the pears are soft, 8 minutes..meanwhile, beat 1/2 cup heavy cream with 1 tablespoon sugar and 1/4 teaspoon ground cinnamon until soft peaks form..serve the pears with the syrup and cinnamon cream.
1 lb cooked chicken breast, chopped~ 1/2 C diced red onion~ 1/2 C diced apple~ 1/3 C grapes, halved~ 1/3 C dried cranberries~ 1/4 C sliced almonds~ 1/2 C plain Greek yogurt~ 1 T fresh lemon juice~ 1/4 t garlic powder~ salt & pepper
Ingredients~ 1 1/2 lg bananas ~ 2 eggs~ 1/8 t bak powder~ . In bowl, crack eggs & add in bak powder~ whisk ~ In another bowl add bananas & mash with fork, but leave chunks to make fluffy pancakes (use only ripe bananas)~ pour wet mixture into bananas & stir ~ In fry pan, cook over med - low heat~1 or 2 T of batter is enough~when it starts to puff up, flip over and cook for about 1 min more~serve w/fav toppings (fruit, honey,butter)
honey roasted sweet potatoes~~ I - 2 lg sweet potatoes, peeled & cut into 1" cubes~ 2 T honey~ 2 T olive oil~ 1 t cinnamon~ 1/2 t salt~ 1/2 t pepper~ Preheat oven to 375 degrees. In lg bowl, combine honey, olive oil, cinnamon, salt & pepper~add potatoes,toss to coat~ dump onto a large rimmed baking sheet~Roast for 25-30 min , stir halfway through cooking
tomato, avocado melt~4 slices gluten free bread~ 1-2T mayo~ cayenne pepper, to taste~ 1 small Roma tomato, sliced thin~ 1/2 avocado, sliced thin~ 8 slices of cheese (your favorite ) Instructions~ Spread thin layer mayo on each piece of bread~ sprinkle w/ pinch of cayenne ~ Layer bread w/ tomato & avocado slices & top w/ cheese~Broil on high for 2-4 minutes, or until bread is toasted & cheese bubbly
