Zuppa Toscana- I could have eaten the whole pot!! The flavor of the sausage is definitely the main flavor but it isn't overpowering. While reading the comments many said it freezes well. Next time I would make a double batch and freeze one for a quick weeknight meal.

Zesty Quinoa Salad - sooooo good and easy. I nixed the black beans and used 1 1/2 limes. Letting it sit in the fridge made a big difference (was very salty at first… not at all after a few hours). Also didn't have cilantro… but not sure I missed it!
