Prickly Pear Lime Sorbet 1 c water 1 c sugar zest of lime 1 c prickly pear juice & pulp 1/2 of lime juice pinch salt 2 Tbl rum Heat sugar, water, lime zest in pan until sugar has dissolved. Set aside to cool/ strain out lime zest. Juice the prickly pears; separate seeds. Mix juice, simple syrup, lime juice, and salt into a bowl. Cover & refrigerate until chilled. Add rum & process in ice cream maker, following directions. Transfer to a plastic container & freeze at least 6 hours.
