This recipe comes from one of my many Barefoot Contessa cookbooks. Ive tried many coconut macaroon recipes and this one is by far the best. For an extra special treat I have been known to dip the bottoms in bittersweet chocolate.
Filipino Coconut Macaroons----I just made these and they turned out just like the picture!! (how often does that happen?!) I had the same papers and everything. The recipe instructions call for cream, but the ingredients didn't list it. I used 2-3 Tablespoons and it seemed to be perfect.
