This is a super tasty, super nutritious power breakfast and is so quick to make. Heat a small amount of coconut oil in a frying pan. Mash a banana with a beaten egg, throw in the pan and top with blueberries, cook for a few mins on both sides and enjoy. You will have plenty of energy to get you through the morning. Who would have thought it, courgette marmalade?! It is true and it tastes delicious on a slice of gluten free toast. If you are an avid vegetable grower it is one of the nicest ways to use up some of your courgette glut! Along with fritters, courgette lasagna (I have THE BEST recipe,) courgette & chocolate cake etc! As you may have guessed, I usually get a lot of courgettes! This is the best way to use up an aubergine/eggplant, even if you are not a lover of them this will convert you! Cook a whole aubergine in the oven for about 30 mins on 180oC, let it cool while you cook a chopped onion in coconut oil for about 5 mins, with 1 tsp cumin seeds or powder. Next add in, 1 tsp grated ginger, 1 garlic clove, crushed and 1 tbsp curry powder along with one chopped tomato, cook for 1 minute then add in the cooked aubergine cut into cubes, a good pinch of salt and 110g…
