Muffin Frittatas - Incredible Egg  These are delicious breakfast bites to make ahead.  I use varying ingredients - bacon, sausage, ham, onion, mushrooms, cheese, zucchini. I put the vegetables, meat, and cheese in the muffin tin, then pour in the egg mixture. Refrigerate and then microwave about 15-20 secs before heading out the door in the morning!
