Aromatic Roasted Root Vegetables - uses 1/2 lb. fingerling potatoes, 3 heirloom carrots, 2 parsnips, 2 turnips, 2 red onions, 1 head garlic, 2 tbls. fresh thyme, 2 tsp. fresh rosemary, and 3 tbls. extra virgin olive oil - roasts @ 375 for 30-40 minutes.
