Confetti Quinoi Salad with Lime Vinaigrette. Ah-may-zing! So much protein, makes for great lunches (and pot-luck contributions)!! I tend to leave the avocado out, only because I don't want it to turn brown when keeping it for leftovers (even with the lime dressing, I think it would have turned at some point throughout the week).
