I had purchased a couple of gorgeous red peppers nearly a week ago in an ambitious attempt to make some rice stuffed pepper dish.

Tomato pasta with scallops, pancetta & sage - pasta sauce = one garlic clove, one small onion, one tin of chopped tomato, tomato puree, dried oregano, pinch of sugar & salt, olive oil. Blitz in blender then cook on hob and add to pasta. Pancetta cubes or smoked bacon lardons & sage leaves fried until crispy + scallops fried in bacon fat until soft and opaque.
