My mommy's "Baked not fried Salmon&Spinach Cakes" Preheat oven to 375. 1 can of salmon, 1 egg, 2 tbsp evoo, lemon pepper seasoning, fresh cracked black pepper, half an onion diced and a handful of chopped spinach. Spray foiled pan with evoo, mix ingredients, form cakes and place in oven. After 10 minutes, flip, and in 15 minutes viola! -- make enough for the week, some quinoa, and some veggies = lunch for the week!
