Zucchini slice. Base recipe - add any extra vegetables as you like. My fav is to substitute some of the zucchini with grated carrot, add corn, capsicum and mushroom. Parmesan is also a nice addition. Add salt & pepper to taste. Brown off onion & bacon first to increase flavour. Cook them into muffins for easy, healthy work/school lunches. I don't add the oil - it doesn't need it!
