I'm always fascinated by the histories behind the things we assume are normal or have always been a certain a way--as American as apple pie or three square meals a day. This one is going on my reading list.

Dan Barber's book 'The Third Plate,' which just won the 2015 James Beard Foundation award for Writing and Literature, makes the argument that American cuisine needs to evolve beyond farm-to-table (which Barber says has been dictated more by the table) to a cuisine that is based on the health of the land and soil. Definitely adding to my reading list.
