Shrimp lettuce wraps : 1 head of Lettuce. 1 lb large cleaned shrimp 1 Tbsp olive oil 1 Avocado, sliced into strips ½ Cucumber, sliced into strips ½ bunch Cilantro 1 medium Carrot, cut into matchsticks Peanut Dipping Sauce: ¾ cup sesame ginger dressing 2 Tbsp peanut butter Cook shrimp. Mix dressing with peanut butter. Assemble wraps with a lettuce leaf, a few strips of carrot, cucumber, avocado, 2 shrimps and cilantro. Drizzle with dipping sauce.
