Roasted Sweet Potatoes 1/4 cup balsamic vinegar 1 tbsp dark brown sugar 1 tsp salt 4 large sweet potatoes peeled & chopped Heat oven 400 degrees. In skillet bring vinegar & sugar to boil. Reduce heat, stir till thicken. Add butter & salt. Toss potatoes and sauce. Spread on baking sheet, still occasionally till lightly brown, about 40 minutes.
