Chihuahua Chili by Katiiez: In a LG pan heat 3 tbs olive oil & 2 diced onions for 5 mins. Add 3 tbs minced garlic, 5 tbs chili power, 1 tbs cumin, 1 tsp coriander, 1 26 oz container diced tomatoes, 1 lb cooked lima beans, 1 14 oz can kidney beans, 1 7.75 oz can jalapeños, 1 6 oz can tomato paste, 1 lb cooked chicken breast in chunks. Boil, add 1 cup water, simmer & cover for 30 mins. Freezes well. If you freeze, let cool completely. Before you chow down, top with sliced avocado and cilantro.
