Raw Vegan Mayo, Karen Knowler. INGREDIENTS: 1/4 cup water, 1/4 cup macadamia nuts, 1/4 cup pine nuts, 1/4 cup + 2 Tbls cashew nuts, pinch rock salt, 3/4 tsp apple cider vinegar, 1.5 tsp lemon juice. METHOD: Blend all ingredients until there are no lumps. It will be quite thick, add more water if desired. Keeps for up to a week in the fridge.
