Creamy Parmesan Mushroom and Spinach Tortellini Soup - this is fabulous! I used vegetable broth, heavy cream, and cartelized my mushrooms. Next time I will use half cream and half whole milk, it was SO good but SO rich with the heavy cream.

Boeuf Bourguignon - French Beef Stew...like this basic recipe.. I made theses subs/ turnip instead of mushrooms, diced shallot or leek instead of the pearl onion, bacon for pancetta...add baby potatoes..easy on the tomatoes paste and this is dinner! Mmm
