Simple panko & parm chicken fingers. Season 3 chicken breasts that have been sliced thin into halves (opt- pound to even thickness) w/s&p. Dredge chicken in beaten egg, then in bowl of 1 1/2 C panko, 3/4 C parmesan, & 1 t thyme. Cook chicken in 2 T olive oil + 2 T butter in large skillet over med high heat until golden brown, ~3-4 min per side. Do not crowd chicken in pan -- do in 2 batches, wiping skillet clean between batches.
