Pineapple Fried Rice

Pineapple Fried Rice! 🍍
    Quick, easy, & delish 👌 Top with crispy tofu or any other protein you like. Enjoy! 💕
        • - 2 tablespoons sesame oil
        • - 1 cup pineapple chunks, fresh or frozen
        • - 1 red bell pepper, diced
        • - 1/2 cup red onion, diced
        • - 2 cloves garlic, minced
        • - 2 cups cooked rice
        • - 1/2 cup peas, canned or frozen
        • - 2 or 3 tablespoons soy sauce
        • - 1 tablespoon agave/maple syrup
        - green onion, to garnish
          • 1) In a large wok or skillet, add the sesame oil over medium-high heat.
          • 2) Once the oil is warm, add the pineapple, bell pepper, onion, and garlic. Sauté until the pineapple is lightly carmelized and the veggies are tender, about 5-6 minutes.
          • 3) Stir in the rice and peas.
          • 4) Pour in the soy sauce and agave. Continue to stir until all ingredients are well combined. Remove from heat.
          5) Transfer the rice to serving bowls and top with green onion. Enjoy!
            • 1) If your veggies are sticking to your pan you can reduce the heat slightly and add a small splash of water.
