Kofta Biryani is flavored rice cooked with meatballs. The idea is to partially cook the rice with whole spices, cook the meatballs in tomato gravy and finally, slow cook them together by forming layers in a heavy bottom pan.
Interestingly, this flavourful biryani does not require baking. You can prepare the gravy and rice earlier on, heat them before serving, and arrange them with the koftas on a serving bowl, as described in the recipe.
pan-fried patties made with red lentils, onion and garlic, and seasoned with oregano and fresh parsley. Perfect served as an appetizer with tzatziki or tahini sauce for dipping, added to stews, or stuffed into pita bread with crisp salad veggies.
