300 calorie breakfast.  Sauté 1/2 cup sliced mushrooms and 1 tsp shallots in organic olive oil pam until mushrooms begin to shrink. Remove from heat. Add more Pam and scramble 1 egg, 1 egg white (& approx 1/8 cup organic skim milk.) After1 minute or so on medium low heat, add 1/4 or less cup of shredded 2% cheddar cheese and shallot/mushroom mixture. Continue cooking until eggs are done. Serve with 2 pieces of wasa fiber crispbread topped with 1.5tsp organic smart balance buttery spread.
