BACON-WRAPPED ASPARAGUS SALAD ~ This recipe was inspired by Bacon Nation’s “Bacon-Wrapped Asparagus With Mixed Greens.” Though I’m sure it’s meant to be more of a side salad than a meal, I adapted it and served it as an entree. Granted, my guys still left the table a bit hungry, but they were otherwise satisfied. Hey, room for dessert! P/S: Mine had the blue cheese treatment–even better :)

After several days of making little more than a dent in those lovely fruits, I decided to turn some of them into dinner. And so…Caramelized Plum-Onion-Bacon Spinach Salad. Good move! Great taste! Though I opted for chunks of fresh mozzarella and it was tasty, I’m thinking shaved parmesan or crumbled gorgonzola would be right up there with yum.

With a bit of adaptation, I turned their “Bacon-Wrapped Chicken Burgers” (featuring pine nuts–yes!) into lovely little sliders. And my guys? Thrilled–and oh-so-filled!

In fact, as I was putting together this salad, I wondered if anyone has made a cheesecake using goat cheese in place of cream cheese. Now that. . . Okay, back on track. This salad tasted amazing–and was eye-pleasing too!
