Fresh Corn Cakes. These are great! I used a Vidalia onion instead of scallions. My corn meal came from a grist mill north of Charlotte. Lots of room in this recipe to make these your own with peppers, herbs, spices, etc. DELISH!
Scallion Pancakes with Dipping Sauce. The best scallion pancakes are crispy and browned on the outside and multilayered and delicately chewy on the inside. Sadly, most takeout versions end up limp and greasy. To create our homemade version, we alternate layers of dough and fat to create the chewy interior and fry the pancake in a cast iron skillet to achieve a crispy exterior.
