Fried Chicken, who doesnt love Sunday dinner with fried chicken, corn, homemade biscuits and homemade mashed potatoes, with homemade gravy??? Well here one recipe where you can enjoy the chicken that is done in the oven and its just if not better than, fried chicken! I can only skimp on one thing folks, and taking out the fried chicken and baking it, but dont ask me to skimp on the rest!
Crisco Fried Chicken- I did my own variation for the batter and flour but stayed pretty close to the recipe. I made this tonight and it turned out AMAZING! I don't own a deep fryer so I used about 1 1/2 cups of Crisco shortening in my iron skillet, used a therm. to get it to about 350 before adding chicken. Add chicken and cover with lid to lock in moisture (won't dry out as fast) for 8-10 min, uncover, flip and cook an additional 8-10 minutes uncovered. Delicious!
Chicken Cordon Bleu Roll-Ups - Used 6 chicken breasts cut in half fillet style (12 pieces total) and then tenderized to flatten. Doubled the breading and seasoned with additional salt and pepper, otherwise followed the recipe exactly. Only problem, encountered was that there were still dry spots on the tops of the breading, so just gave a good spray of Pam and put back in the oven to finish.
