Traditional Andhra Vankai kura (brinjal curry)

This tasty ‘Vankai kura’ (the Telugu word for ‘Brinjal dry curry’) can be prepared within 10 minutes with a few basic ingredients. My moher-in-law often used to preapre this yummy curry. One will not find this recipe in the common recipe books. Thus be sure to note this down or bookmark it! Note:* I will share the recipe for the vankai kura podi in my upcoming next post.
