Passionfruit Martini: 3 passionfruit | 2meas./50ml Apple juice | 2 meas./50ml vodka | 1meas./ 25ml passionfruit liqueur | 1tbsp lemon juice | ½ tbsp Monin passionfruit syrup | ½ tbsp sugarsyrup | ½ tbsp egg white (optional) –– Halve the passionfruit, scoop the flesh into a small sieve. Press the pulp with a spoon, extract the juice into shaker. Add the other ingredients, fill the shaker with ice. Shake vigorously. Strain the cocktail into glass.
