Fainting Imam (Turkish Baked Stuffed Eggplant) Recipe
The intoxicating aromas of this Turkish dish of baked stuffed eggplant supposedly caused the Muslim priest for whom it was made to faint.
Eggplants Stuffed with Lamb (Karniyarik)
<p>Cookbook author Rebecca Seal first tried this dish in an <i>esnaf lokanta</i>, one of Istanbul’s ubiquitous cafés for local workers serving home-style hot dishes, in the Fatih district. She didn’t know enough Turkish to order, so ended up pointing and smiling at a few of the dishes bubbling away on the counter. This was one of them and it made a very satisfying lunch.</p>
Yogurt Dip (Cacik)
<p>Cacik is a garlicky yogurt sauce that is often served alongside grilled meats as well as a meze dish. Its close cousin is <i>haydari</i>, often served alongside raki, an aniseed spirit, and made with very thick strained yogurt called <i>süzme</i>.
