Marinated Vegetable Salads
Alisha’s Texas caviar: 1 can of drained black-eyed peas 1 can of drained corn 1 can of rinsed and drained black beans 2/3 cup diced fresh tomatoes 1/2 cup chopped red bell pepper 1/3 cup chopped red onion 1 med. diced jalapeño - seeds removed Juice of one large lime 1/3 cup chopped cilantro 1/2 to 2/3 cup Brianna’s Santa Fe blend salad dressing or Zesty Italian or homemade. Combine all ingredients and let marinate a few hours before serving. Serve with baked Tostito scoops.
