Veggie Loaded Baked Potato Soup (I made this tonight and it's UNBELIEVABLE!! I added one carrot grated because I needed to use it up lol, used a red onion for the onion. I also ended up sautéing the celery,onion, and carrot to soften and boiling the potatoes until almost done and then putting it in the crockpot on high for 2hrs...soo good!!!)good vegetarian recipe! Adapt for vegan also!
Asparagus risotto recipe: Ingredients: 1 large bunch of asparagus, washed and trimmed 2 cups uncooked Arborio rice 1 tbs butter 1 cup finely chopped white onion, about ½ onion 2 garlic cloves, minced ¾ white wine 4 cups broth ¼ cup heavy cream ½ cup grated parmesan Salt and pepper to taste White truffle oil to drizzle Additional grated parmesan to serve
