10min · 2 servings     Ingredients   • 1 Eggplant   • For the marinade   • 1 tsp chilli paste   • 1 tsp chili oil   • 2 cloves garlic  • 1 tbsp soy sauce  • 1 tbsp rice vinegar  • 1 tbsp maple syrup  • 1 tbsp hoisin  • Salt   • Rice   • Spring onions  Sesame seeds  Method:  • 1. Start by salting your eggplant slices and patting the moisture dry.  • 2 blitz together your marinade and brush it on the eggplant flesh.  • 3. Grab a skillet with some oil and over a high heat sear the eggplant on the marinated size and then brush the other side once flipped! Cook until charred and softened.  • 4. Cook your rice and then top with the eggplant and spring onions and sesame seeds and enjoy!
